Last Friday we had the in-law family over to celebrate mother-in-law's birthday. I smoked bone-in chicken breasts, thighs, and legs using chunks of applewood. Smoked them for about an hour to 90 minutes with medium/medium-high heat. They sat in brine for a day and then seasoned with rosemary, thyme, etc.
They turned out great. Everybody loved them. The flavor was great - maybe a little too much apple, but the smokiness was right on point. Not too overpowering, but enough of a kick to be distinct.
Anyway, took the leftovers and made chicken salad a couple days ago. Friggin' delicious.

Speaking of BBQ I have just been FDA approved for my Mulekick BBQ sauce..
I have worked on this sauce for years. It started in the French Quarters in New Orleans and I perfected the sauce working as a Chef in Las Vegas!!!

Any big green egg owners? Someone near me posted a large version, and some kind of fancy regulator/fan thing for $500... I jumped on it, but the guy was flaky and sold it to someone else because I wasn't replying in minutes. His brother might be selling his also though, so wish me luck! I'd never really thought about getting that type of grill because they are so expensive, but had to jump on $1,000 worth of product. Surprisingly my wife was on board.Comment
