    Make sure you brine it over night, critical step for meat such as turkey that has tendenciy to dry out. Keeps it moist and flavorful.

    For the wood, stay with the Apple, Pecan, or Alder for the smoke. Its a lighter smoke that is better for birds and fish. Leave the hickory, mesquite, and oak for your red meats.

    For Brines, I mix it up every year. Last year I cut up 2 apples, kosher salt, half bottle of sweet white wine and some seasoning. I say just experiment when it comes to brines, my buddy last year went with apples, honey, kosher salt, chicken stock, and ginger root.

      1 16 lb. turkey
      1 standard microwave

      Preheat microwave on high for 5 minutes.
      Heat turkey in microwave for 1 & 1 half hour.
      Enjoy Cajun style cooked turkey, mmm-mmm-mmm! Delicious!

            Don't eat meat anymore but when I did I would deep dry my turkey. I would use different marinates and inject that then season it butter rub let it sit in the fridge overnight. I highly recommend injecting your turkey with a wet jerk season rub. Season it with salt pepper etc rub with butter. Let that sit in the fridge overnight then deep fry it. I always used peanut oil when I used to do it. It was the best turkey ever.

                  Cooking a bone-in turkey breast only at high heat (500 to 550) in the oven is delicious and fast. Smoking in my Weber Smokey mountain cooker is my first choice but this method is a close second.

                      What do you do with the oil after? I have 4.5 gallons of peanut oil (which as you know isn't cheap) that I need to dispose of or figure out how to salvage. I've heard that you can run it through some cheese cloth and re-use it for x number of month's.
