I'm a bit new to Mut to forgive me in advance for the noob question.

In the solo challenges some start off at 3 star difficulty right off the bat. Do you get more rewards by also doing the 1 and 2 star difficulties working back up to three and then on to 4 or 5?

You would not get extra rewards. On the second play through you would be required to complete all objectives (not just those missed the first go round) to get all the stars.
