Coach mode is in MADDEN 08 look inside for instructions!
I know how so many guys want to just call the plays for their team and not user control anything. Well you can't do it 100% like you could in current gen but I did find a way that should get you guys your coach mode fix.
Thanks to a new feature in Madden and lead blocker you can play coach mode but with a little catch.
On running plays all you need to do is switch to a blocker and hit the LB button until that player turns light blue in color. Then just snap the ball and do not switch back to the ball carrier. The cpu will retain control of the RB during the entire play.
On passing plays you can't control a blocker you must control a WR, TE, or RB who is running a route. Just scroll to him and hit the LB button it will turn light blue. This will give you control of that receiver and the cpu will take over the QB duties for you. Then just run your route the cpu will throw the ball to the open receiver and it might not be you. But if you want you want to you can call for the ball using the A button.
I do not know if this will work head to head or online but there you have it. Its not what you guys want 100% but its better than nothing hope that helps.
