My kids sometimes prevent me finishing games (responsibilities and all that!!) can you save mid game like you could on last gen or at least sim to the end of the game

No, this is one of the many last gen features that has somehow been forgotten by EA. I'm like you though, with young kids it's sometimes hard to finish a game in one sitting. This should be in every EA Sports title, can't be hard to implement.

You should be able to SuperSIm to the end of the game. It is an option in the pause menu.
