I still think 06 for ps2/xbox is the best.

Madden 06 on PS2. It had Qb vision, truck stick, hit stick, Superstar Mode, and a lot of other good stuff.

Madden 2005. IMO Madden 10 has a pretty good chance of unseating it (finally) but it needs a patch for the flats bug.

EDIT: How could I forget Madden 06?? I still fire that up on my Xbox occasionally. That was pretty much a more polished version of 2005, and yeah, I'd have to rank it right up there as one of the best versions to date.
