Need some serious help setting my defense up before the cpu snaps the ball!!!

You can skip the scene with the QB breaking huddle and walking up to the line of scrimmage. You should be able to do at least one line shift, one LB shift and one coverage shift before the snap, no problem. If you need too much more than that, you're either trying to set up a cheezy nano blitz, or you're just over-thinking it.
