Jason Witten definitely isn't blessed with great athleticism, but his excellent route-running rating (93 on the out-of-the-box roster) allows him to create separation from faster defenders.
One play I have a fair amount of success with is... well, I forget what it's called, so I'll describe it. It's a shotgun set, Austin and Bryant are split out wide on opposite sides of the field, Ogletree is in the slot on the weak side, and Witten is in the slot on the strong side, and there's one running back in the backfield. Austin and Bryant run streaks to draw the coverage down field, Ogletree is your outlet running a short out route, and Witten is the primary target running a post route across the middle of the field. If you can get protection (keeping the RB in to block helps), you ought to have a fair amount of success hitting Witten over the middle with this play against a variety of coverages.
