I must admit that I see quite the difference as well in my KC franchise. Especially after having been developing them for 1½ seasons, and getting their blocking and awareness up. Anyway, you should in general never assume to have much more than 3 seconds to pass - when you get used to that, sacks will happen less, and mostly on blitzes when not in shotgun. If you are in a long yardage situation, best thing is to be aware of where the pressure is coming from and move around based on it (so if you see LE/LOLB getting past your RT, move a bit left to get that extra second for your receiver to get open)

OL definitely play differently based on stats. Where I see the differences play out the most is with my defense vs my opponents OL, not my own OL. Where I'm able to get pressure from can change dramatically from one game to the next depending on the opposing OLs strengths and weaknesses.
