Depends on what you are looking for really. There are Varsity, All American and Heisman sets covering just about every concievable variation of adjustments, but turning this game into a simulation is all but impossible in it's present state.
I like SECElite3's Hesiman and AA sets because they are aimed at making the game look and feel like a football game. Jistics is getting some rave reviews with his higher threshold speeds that seems to be slowing down the big plays and there are some Varsity sets that are also generating a fanbase.
You really just need to setup your House Rules for each set and try some Play Now games and see what fits your style and team.
