I play every game in its entirity. I use All-American difficulty and 7 minute quarters. I let the computer take care of all the recruiting stuff though.

I always play with a cupcake at the beginning, so I'll sim the games that I know I'll have no chance of winning, usually 1 to 4, depending on the schedule. When I do play, I supersim most of the defensive series and play the offense, partially because I like to get more seasons in, and partially because offense is more fun for me. Recruiting restrictions are also a frequent self-imposed handicap in my dynasties.

Play every game on AA with slider adjustments - 7 minute quarters.

Right now in year two of my FSU dynasty I'm thinking about leaving after this year if I win the BCS. Last year my team won the Orange Bowl.

If you play most of the games won't it make it really easy for your team to get better? (assuming you win most of the games you play).

I schedule 1 or 2 ranked teams and a couple of cupcakes. I usually play offense and sim defense but play big games. I don't do recruiting, I let the CPU do it for me. Waste of time.

Re: How do you run your offline dynasty?

I play every game. 5 minute quarters, All American, no sliders, since that's what online uses.

I play the school's real-life schedule for as long as I know it. Unless I'm using an FCS school, in which case I'll match any games vs FBS schools but then accept the default for the rest in year 1.
After that, I try to schedule tough out-of-conference schools, mostly regional schools, and do home-and-homes with them. 6 homes games per season, spread out evenly throughout the season for visit flexibility.

Rarely lose on All American, but I found on NCAA 09 when we used Heisman for an online dynasty, once I got used to it I would still beat higher-rated CPU teams every time anyway. You can make the CPU controlled players faster and strong by switching to Heisman, but you can't make the CPU smarter.
