As USF (in 2011 and beyond)

1- UCF, FIU, or FAU
2-FSU and then maybe a Big Ten team???
3-Florida, Miami, LSU, and maybe a Pac 10 team

Playing as Louisville, UK is a given every year. But teams that I'll likely schedule during the course of my dynasty:

*Memphis
*Miami
*Boise State
*TCU
*Arkansas

I like to get a cupcake(home) (insert MAC,Sun belt,C-USA team in here)
Then I usually get one road game to Florida or Cali for recruiting wise(yeah some RP lol)
Home and Home with a great program(think tOSU, USC, etc)
If I'm a team with an OOC rival I schedule them here, or I get a team thats pretty near my region so I don't have 3 long road trips for OOC sometimes for example if I was OU think (Tulsa, SMU, TCU, etc)

so miss notre dame florida st
penn st michican memphis
ga tech USC texas a&m
tulane houston west virginia

Well I usually schedule a good mix of teams.
I like to start off with a team that is close to mine ratings-wise, then put an easy game after that.
Then I go for a few teams that are much stronger than my team.
Of course it depends what team I am in the dynasty but I usually choose a struggling school and try to build it up.
