I suggest you start out with their playbook. Bunch of I-Form and ace formations. John Clay is a beast and is perfect to start with. They have a good defense to learn with too.

Is it possible to control a particular player when in defense? A lot of times the cpu does quick offense and I get panic because I am still tapping the "B' button to cycle through my players...

This will teach you how to read pass coverage on a defense. Always know where the safties are before every single snap.
Never thought to check Youtube (duh) for this sort of thing...lots of great info in this, and many of the other clips on the page...

You can hold down B and use the left stick to cycle through players. It's much quicker. It'll default to the player you were controlling at the snap for the next play.
