The fact that Madden is so easy is making me considering trading it in for some other game...

NCAA in my opinion can be as easy or as hard as you want it to be... Depends on how you set your sliders.

This is dead-on.

The disparity between teams also helps make the game much more fun. In my 7 years at FSU, I lost 1 regular season game and 1 bowl game. With the same sliders, in my ULL dynasty, I lost 5 games in the first season.

You can beat the cpu's a** anytime you want alot of times just because you can counter the CPU when it wants to cheat.

Like you can be passing all game then you choose to run a draw to mix it up, well the CPU knows you're play and will come out with all Lb's an stack the line even if you got 4 wr's out there.

To counter all you do is call a pass and you burn them most of the time

If you play cheesy, it can be real easy. Run slants every single play, and you'll complete 90% of passes against the CPU. Play realistically, and you can lose easily.

But at your question about rosters, yes, you can download updated and named rosters. On 360, I recommended SHAKEANDBAKE30's rosters.

This game is challenging with a good slider set. I've played over 12 seasons in my offline dynasty with Indiana and have only made it to one BCS bowl. I get realistic stats. I've upset teams, and been the victim of upsets. I've blown out team and have been blown out. I've won/lost close games.

I'll be honest, I've lost 4 total games with these sliders. I lost 3 in an FAU dynasty against Michigan State, USF, and some other good team, all by single digits. And I lost one game in one of my Louisville dynasties my first year.

Other than that I basically dominate. I don't cheese; I don't nano-blitz, rocket catch, I avoid four verts and only use slants occasionally on short yardage plays.

I tried other sliders. I played NCAA 10 on Heisman all the time and lost maybe 1 game every three seasons. I can only get competitive games online, so the OP should probably just try that route. I personally hate playing online because for every competitive game I get I get two more cheesers, but that's me.
