Answers to the original questions:
1. The defense is much better this year.

3. Nobody wants to admit it, but the defense is TOO good this year. I was playing a game last night (UW vs. WSU), on AA with default sliders. My slot receiver was running straight downfield at the free safety. I saw the FS break outside toward the outside WR, knowing my slot WR was going to break inside, I threw a perfect pass down the middle. The FS (with his back turned) made an amazing turn around, caught up to my WR AND got in front of him to make the miracle interception. I watched it over, and over, and over again on instant replay, it was total BS by an average safety.
I'm all for improved defense, I'm all for getting intercepted when I make a mistake, but on AA the WSU defense was playing better than most NFL defenses.

And I bet his back was turned?
That's one that that needs to be fixed. If the players aren't looking at something that keys/clues them to react...then they shouldn't react. In other words, if he didn't see the ball or see the receiver's hands or eyes go up, then how did he know to make a play on the ball?
