Such a statement is not true at all.
There are many, including myself who are playing with 0 sliders.
The jury is still out on which level is best.
Sliders decide two things.
1st, how often an animation is triggered, which gives the percepetion of a certain movement.
2nd, how fast an animation will play through.
As you increase the Speed Threshold away from 0, the faster the running animation plays through, even
cutting out certain portions of the animation to give the perception that players are running/moving at similiar speeds during gameplay.
(thus the hiccup running animation because there is only one running style)
I'm playing of Varsity because AA and Heisman does not allow players to be
"Explosive" even at a 0 Speed Threshold setting.
I've re-rated my roster so that Blazing Fast and/or Explosive player's are special and rare. (those freakish Florida type guys)
The truth is, that there really isn't such a thing as Realistic with video games.
It's all about one's personal perception.
I would say try Varsity with...
Everything CPU at default 50 (passing accuracy must be lowered though)
Hum everything at 0 or 5 then adjust to what looks right to you.

As I said in another thread, you "MUST" get hold of/do yourself Re-rated roster's because default roster comes with mostly track stars at every position.
Ex.
Most in-game generated TE recruits have SPD and/or ACC in the high 60's to low 70's.
Not the 80's and 90's you see in the default roster.
