Man coverage blitz, and get to the QB before any of the receivers get open.

I've found that man coverage works much better than zone coverage, and in the pick-a-play screen, go to adjustments and set your pass coverage to conservative. This will cause your defenders to just knock the ball away instead of going for the pick and possibly getting burned downfield.

Also having strip ball on aggressive on 3rd down passing situations, the DB goes for the strip as soon as the WR makes the catch and sometimes you can cause the WR to catch and then drop the ball.
