How do I get better at using the linebackers/safties?

I can diagnose a play pretty quickly and get in position to make a tackle, but I always end up whiffing on an interception or a stop in the backfield and what could have been a turnover or a loss of yardage goes for a big play... It's also hard to get off blocks, I can't just weave through the defense and mess stuff up. I guess I just get in the open field and my hands decide to spazz out.

If you are getting in position to make a tackle and missing try using the tackle button vs the hit stick. Also check your tackle slider. I set mine at 10 for human and 0 for cpu to see some missed tackles. It is college football after all. I like to see a back hit in the back field but stay on their feet to spin out and gain a few yards. I like to control linebackers. I can get to most backs but sometimes if I use the hit stick I get missed tackles because I should use the tackle button. It takes some time to perfect. I have been working on it for 14 years now.

Well I'm talking about online play, guess I should have clarified. I will try your suggestion for CPU play though.

EDIT: Does holding LT cause your linebacker/safety/whatever to position themselves towards the ball? So if I held LT right before a hit or interception and then pressed x, I could stand a better chance of making the play?
