I used to love playing these on the Last Gen titles. It was so great to try to relive BYU's famous comeback in the Holiday Bowl or replay an old Iron Bowl. Why were these ever taken away?

Probably because they were the same ones every year for the most part so replay value got old...

What they should do is have the equivalent of "Madden Moments," and have it update weekly and the rosters reflect it.
