When looking for a lower level school to play with I would look for 3 things:
1. Location of the school: You are starting at the bottom so recruiting will be much harder. You need to be in a state with tons of over looked recruits like Texas, Florida, Georgia, or California. You also might be in line for transfers from the bigger schools which can help you build faster.
2. Current roster: I would look for a team that had a running QB. This will help you over come a poor line and can win you some games.
3. Conference: To build a smaller school up you have to win early so taking a school in a BCS conference may not be the best idea. I like to go with schools in the Sun Belt, Mountain West, MAC, or Conference USA. I feel like I can win early with any team from those conferences to make a bowl game.
A few teams I have thought about doing a OC/DC coaching career with are Georgia State, Texas State, FAU, FIU, or UTSA.
