I would have to look when I had the Xbox fired up but one thing I do remember as I was thinking about using Pitt is that James Conner is white. I also felt like Army and Navy took too big of a hit.

Stuff like races I wouldn't have touched much and left them as I downloaded the old original named roster before I made edits, because I'd have no real idea unless I google image searched 70 players on 132 teams, lol. Even then, I assume it'd be incredibly rare to have the race wrong, unless they're like a 4th string 60ovr MLB or something.

The service schools absolutely need the nerf though, because it's practically a meme how about after 2 or 3 years they become perennial top 5's. However, the real reason this is is because of QB play. The QBs are rated like any other normal QB, which shouldn't be the case. So I generally set throw power to 70 and accuracy to 50. In sim stats throughout dynasty, this keeps them in check, and their % completion around 50%, usually going 4-10 or around there.

Only thing is, each year they bring in new QB recruits, you need to set the incoming QBs the same way, otherwise they become instant starters and end up becoming gods again. So the start of each new year I always check the service school QBs and reset them accordingly.

This isn't to say they go winless each year or something though, they finish from average to even a winning record here and there, I've even had Navy I think crack the top 25 once or twice. This just keeps them in check instead of top 5'ers.
