Like lunging off a strike is very unresponsive.

It's treated like a soft combo, very much like chaining TDs and strikes.

It does.

Striking off those sorta sig lunges are rather unresponsive.

Can the strikes off the sig lunges be a little more respsonive? They rarely chain.

How do you do the shifting kicks (kicking and stepping through into the opposite stance) of Thompson?

It was shifting strikes like this in EA UFC 1 and a bit in 2, I would like to see it return...
