So, can you see the player's overall when creating/editing a player (or do you have to accept then check under the team what they are rated)? - If so that is stupid.

I like to use my own unique prospects in games (enjoy custom draft classes in other games).
So I am wanting to use my guys with cool names and stuff, not other guys I've never heard of.

I don't know exactly. It just seems so different than playing a basketball/baseball/football franchise.
So you can sign players off of other teams (& your own) in the offseason (as many as you can...
