Yes. They are reflecting Madden 15's out of the box ratings. I haven't done any rating changes outside of the opening day ratings.

I did create a few players who were missing, signed/released...

If you click on a team you can see their full ratings by selecting the position drop down and then scrolling to the right under the players at that position.

No way that I know of. You just have to use the rosters and start a dynasty. It's one of the downsides to keeping an old title. I haven't seen any editors that can change the year or schedule to...
