When playing a season, is it possible to play all the games for all teams... or can you only play the team you choose for the season? This bugged me about the baseball games, you cant play all the teams!

I believe you can. Its a little tricky to find. Go to NBA.com(on 2k9), and click on NBA League Pass. You can choose to play them.
