So, I packaged a ton get Cozens, but he’s not anywhere in my Roster Moves section. He shows as being under contract, so I’m at a loss. Any help?

If he's under 20 and the season started without him on the NHL team, he may have been "returned to juniors." If that's the case, you may have to wait until next season to use him. I think you cannot play in the AHL at under 20 (though I am not sure on that).

Is it possible he was an RFA that signed after Dec 1?
