Well, it depends on how you play. Personally, I like having cutback ability in my running backs even more than speed because I like to run stretch plays and take a slashing style to the ground game. I like coverage ability more than ballhawk in my defensive backs because the ballhawks tend to take more chances at picks than just coverage guys, which sometimes leads to big plays and other times leads to being grossly out of position. Clutch is another big one. Play with or against Dwight Clark and you'll see what I mean.
These are just some of my preferences, though. It really depends on how you use guys. Shannon Sharpe's a route god and a speed burner, both of which are useful if you get him in motion, split out, or running routes with some double moves in them. If you want to throw short curls and quick ins, where he's likely to get smacked by linebackers, those abilities might not be as useful as possession receiver or tough over the middle. For this reason, I think abilities can be misleading and need to be contextualized by a scheme designed to maximize them.
