There are two things that nobody has brought up or shown videos of, at least of what I have seen.

1) Special Teams plays like how the kicking and punting along with kickoffs and free kicks are implemented.

2) Are pump fakes in? If they are, I would assume that you would press the right stick back and then just let it go.

Throwing the ball away was in one of the videos. If you look in the lower right on the play the QB scrambles it shows and icon of the Y button and below it says "Throw Ball Away" or something to that effect...I am too lazy to actually look it up myself but it was there.

I definitely want to know about laterals and option plays. I'd like them to be in, but it's not a huge deal if not.
