Are there more than 11 players on every team or is that it? If so, how many exactly?

I went through one of the created teams (fresno wildfires) shipped with game and I counted 58 players, all editable (you can only edit name, number and skin tone).

unless you have the downloadable editor-I couldn't get it to work. Don't know how BB came up with their editing system-terrible.
