Yet, I see your technical point about the roster.
This basically.

Fix the progression.
Make recuriting more realistic / unpredictable.
Improve rating system and depth chart system.
And other things that have already been mentioned.

Doing stuff like this would an 85 man roster a necessity. Right now it'd just be an unnecessary luxury. It'd look realistic and would be cool to have, but there's no real reason for it. This is a game where you could use the same ~25 players every saturday and not suffer any consequences.

Much more goes into to making a football game and compressing it than you think. Playbooks and commentary alone take up a huge amount of real estate.

Using my last season at Clemson as an example, which was 2015 and I developed them from a 3* starting 2012 (I took over end of 2011 when they had already gone 5-7). The only recruit that I actually built up to become a starter was my QB, who came in at 68 and started as a JR over a better rated SO because he fit the offense better.
This is also part of the problem, it is unrealistic (but very easy in the game) to turn a 3* team into a 6* team in 3 years. That drastic of a change should have to be built over 5 or 6 seasons AT LEAST (and vice versa programs that have a few poor seasons should not drop that quickly). So in order to get to that higher prestige you will go through several classes where you will NEED those redshirted players to develop and eventually play.
