Search for 3* OLmen and look at the teams in their top 3 spots. If you see Alabama, Oregon, Florida, USC, etc., and they are still in top8 or top 10 phase, then there's a good chance that they are gems. 1 hour of scouting will give you their real overall. Both of the gem OLmen that I recently got were found after several weeks of recruiting 4* and 5* OLmen with no success. The gems are not being recruited heavily, if at all.
I typically recruit 3-4 OLmen each year, so I'm seriously considering only going after 1-2 top guys that I'm in their top 3, then go after the 3* gems later. I could use the recruiting minutes on other players at other positions early on.
PocketScout has a great thread talking about real ratings. He talks about measurables and ratings not matching up, thus predicting possible gems.

Thanks for the info! Since trying this I've found a center and a guard that turned out to be gems. (Though I have to admit, it ALMOST feels like cheating...not enough that I won't do it, but still...lol)
Quick question though...Does this only work for O & D Linemen? Cause I've tried it with a few QBs and RBs, and it never pans out.
