I played a game vs the cpu in my online franchise and it gave me a replay on damn near every damn pass completion or run. If i tried running hurry up it took forever! how do i turn the replays off?

Pushing "Y" if you want to run hurry up or "A" if you want to call a play from the huddle will bring up your play call screen regardless of whether or not there's a replay showing.
