What exactly does the assistant coach do when turned on or off?

Im not sure but i think the assistant coach will make subs for you when they feel its needed.

I thought the asst. will adjust your lineups for you such as putting the correct players in their best positions, when say an injury occurs or fatigue is at play, at least that's what I thought it was for. My asst. put strikers in at RB, a GK at RCB, so I turned it off.

Yeah, pretty sure they just adjust lineups, and they do an atrocious job. It's best to leave it off.
