When you create a player in game, it is normally in the Free Agents pool.

the game only allows you to create so many players. if all the slots are used up it allows you to create another player but doesn't save him, that's probably why you can't find him. the only way to create a player when that happens is through NHL view.

I normally create them through NHLView and just use a retired player or someone who is no longer in the game.

does NHL View have an issue with changing full team names? I'm editing the knights to golden knights for las vegas and it messes with all my custom teams...i may have to create them on the game and just go with knights.

Here's what I did:

I created the Las Vegas Knights and the Quebec City Aces in NHL Legacy. Then, in NHLView, I edited their names to Vegas Golden Knights and Quebec Nordiques, and when I go back to the game, they appear with their right names.
