Is there anyway to sign players to your AHL team (just an AHL contract, not signed by the NHL team) in franchise mode?

There is no option to control just the AHL aspect in Franchise. You can sign a FA, but they will always be put on the NHL team and have the affiliation of the team you are controlling in Franchise.

I have no idea how it works in AHL season mode, however.
