Can you play season mode using CHL teams? If so can anyone tell me whether or not you can edit CHL player ratings?

Yes, you can play season mode with CHL teams. You can choose from the OHL, QMJHL and the WHL. I know you can edit players within the season mode, but I’m unsure if ratings is part of it.

I'm serious are they using the real rostsrs from these Small league's league such as CHL & others?? or is all the players Genaric?

They have the correct players... some of them anyway. The WHL rosters I've seen are pretty outdated, but at least they're not generic players.
