How do you start a franchise with custom rosters?

Am I missing something? I started a franchise and my goalie equipment edits didn’t stick.

There is a button for the Goalies. Go into the creation menu, open the main data site with the name of the Player and scroll down to the last option to activate and use your current Goalie gear.
