Can you set depth charts/turn trades off in a season mode?

I'm thinking of picking this game up, but have a couple of questions.

1)Can you set depth charts for all teams and have them remain the same during the year?

2)Can I turn trades off for all teams?

I want to use real NFL rosters, set the depth charts for all teams and control one team with absolutely no trades. Is this possible?
