I pretty much never break tackles by tapping the sprint button. I still try and can only seem to fall forward for a few extra yards.

I think the best way to break them is to use the right juke stick moves. It doesn't always work, but a lot of the time guys will shed tacklers that way. It also helps to play to a back's strength: if he's agile and quick, use the spin and/or the juke, and if he's a bruiser then use the shoulder charge and the stiff arm.

Also, if you're wondering how many broken tackles there should be per game (or any other stat for that matter), a good way to figure that out would be to sim some games in franchise mode and then check the stats (it's usually what I do with sports games, but haven't done it yet for this one).
