Can you use updated rosters for the 360 and then do a fnatasy draft....If so which rosters do I use (Franchise or Roster File) Thanks

You should be able to do that. I did it with the "greats" roster Capa put out a while back.

Use the roster file Murphy, I do it all the time with me and some friends in our franchises.
