I've seen a couple of times that for a pickoff the catcher will make a fist and signal which base by tapping the fist against the corresonding thigh. But....

I think the tap means pickoff throw or just something to make sure that the runner is aware that you know he's there. there's the right thigh for 1b, left thigh for 3b, but i'm not sure what second is.

We usually go with 1 for fastball, 2 for curve, 3 for change. Most of our pitchers don't throw more than that. They can differ from team to team though, so make sure you and the pitcher are on the same page before the game.

I used to catch in HS and some in college...

                        1 - Fastball
                        2 - Curveball
                        3 - Changeup
anything else is up to the individual pitcher

                        Fist was pitchout
Tap inside of right thigh was pickoff to 1st
Tap inside of left thigh was pickoff to lead runner

As others said, with a runner on 2nd, you have to have a "trigger" sign. Sometimes it was the number one. So, to throw a fastball, you could make all the signs you wanted, but they didn't mean anything until you put a "1" down. The next sign after the "1" was the pitch...fastball was 1,1; curveball was 1,2, etc. Sometimes there are different triggers too...wiggling fingers, grabbing cub, really anything can be a sign...just make sure you talk with your pitcher!

as the catcher, you should pick the sign designation, since you're the one that has to call them and you have to know what's coming. Work it out with the pitcher before hand though, ESPECIALLY with the triggers. In your league I doubt there'd be much sign stealing, but you never know, so watch for it and be ready to adjust.
The universal sign to remember is this: tug your mask to indicate the old "hit the guy in the head" pitch.
