I too played my first 5-6 games on Pro, and it wasn't a challenge at all. Games would start out close, but we'd pull away every qtr, winning by 20-25, sometimes even 30-40 pts. This was on Pro/Simulation. Then, I started playing on All-Star, which is perfect in terms of you not hitting an unrealistic %, CPU missing ridiculously easy shots, you being able to pass thru 3 defenders for assists, etc.... But one thing about All-Star, and especially Superstar, is that the CPU
1) Makes WAY too many HEAVILY contested 3's, and even mediocre CPU players are lights out from mid-range
2) In the lane, the CPU gets perfect animation selection to score over you, your players constantly slide out of position for rebs or defending properly, while at the same time, you'll pass to a WIDE OPEN Bynum under the rim, who will then take a dribble, gather slowly, and go up in the worst possible way so it can be blocked or contested.
3) The CPU grabs an insane amount of OFF REBS. Nothing is more frustrating than finally being able to stay in front of DJ Augustin (Yup, not Kobe, not LeBron, DJ AUGUSTIN and even lesser PG's than him), he actually misses the contested shot for once, just to have your two big men *slide* conveniently out of position, allowing an easy putback.
So I was trying to figure it out cuz I knew I couldn't play on Pro, we'd never lose. So I was playing around with the difficulty and surprisingly I found that you can play on even SS, but just change the style to Default. This is the key. I tried a few games on SS/Default, also, All-Star/Default, and lo and behold the game completely changed for me. The insane OFF REBS stops for the most part, you can actually score in the lane, it's again difficult to beat the CPU off the dribble, but the CPU becomes human again. They actually miss J's, even sometimes uncontested.
So now I have found a nice balance by putting it on All-Star/Default for the remainder of the season, and then once the Playoffs start I'll bump it up to SS/Default. You guys should try it if you're seeing the above issues on Sim Style on AS, SS or HOF. I actually haven't labbed HOF because it's almost guaranteed to be ridiculous, I might though. Maybe for the Finals.
Looking at it though, when you are playing say, regular Quick Game mode, when you change it to Simulation in the sliders, look at what it does to the sliders. There's some drastic changes that happen to fatigue, shot success, etc. I think these changes affect the user way more than the CPU. And unlike that mode, you can't tailor it to your preferences. I think the CPU just exploits that.
Also, I think WTF said this somewhere, but he's right: the movement seems less clunky and sluggish on this setting, not sure why. It'd take me a full second to turn and run somewhere before, but now my 92 quickness/89 speed guy looks like it.
