I agree with the guy above that said Red Dead just felt more alive, which is ironic consider how desolate and empty much of that map is. Bring that feeling over to GTA and it will go a long ways to keeping the game from feeling stale (that and more creative/open missions that don't feel so scripted).
2 things that jump to mind immidiately that made Red Dead feel so dynamic that could be brought over to GTA are
1) If they have a large suburban area/countryside section of the map (which I strongly believe they will), that we get the animal technology from the Red Dead team. Being mauled by a mountain lion was both thrilling and terrifying (especially the first time lol).
2) An improved version of the NPC "Random Events" from Red Dead, which were themselves very good. Imagine it, you walk into a Cluckin Bell to get some food, and the place is being robbed by 3 guys at gunpoint and you're given the option, do you stop them, join them, or wait for them to rob the joint and then jump them when they leave...
Or you're driving down the street when you see an accident. The two drivers get out, but one of them is enraged and pulls a gun and you only have a moment to save the other driver before his head gets blown off. Sure if you fail nothing bad will happen, but if you succeed, the driver will probably reward you with something for saving his life.
There's a million different things GTA could do with this in a vast city environment.
If those 2 things are brought over from Red Dead (and even better if they're improved upon) I will be very happy.
