There isn't a difficulty setting in the game. They let you do anything you want for the most part. You can die, but 1 or 2 shots from a gun won't kill you. First period guns didn't usually kill people right away. Most of the people died from the wound that the shot made later. Second everyone would be pissed off if they died all the time.
The difficulty comes into play if you want to get 100% sync on everything. Those tasks are hard and will keep you busy for a long time.
SpoilerI've seen your character being shot with no damage at all, yet you shoot one bullet and it kills the other guy right away. It's either the AI can't shoot or they miss on purpose.
I also saw enemies stand 15 yard from where you just shot down their buddies and no one heard anything, and it happened more than once. So either it's buggy or it's just bad AI.
To those who played this one, how is the AI? From what I've seen that AI was pretty poor when it comes to guns.My Specs:

Ubisoft's upcoming action game to offer $1-$20 "Erudito Credits" for Xbox 360 and PS3 that will allow players to acquire items "disregarding your current level."
Last month, Electronic Arts executive Peter Moore said microtransactions would someday be in every game. For Ubisoft, that time is now. According to product listings for the Xbox Live marketplace and PlayStation Store, Assassin's Creed III will allow gamers to purchase a range of in-game "Erudito Credits," ranging from $1 to $20.
It is not clear what the Erudito Credits will allow gamers to purchase, though a screengrab from WorthPlaying indicates the content will act as boosters of sorts, allowing players to "acquire some game items, disregarding your current level."
In addition to the Erudito Credits, Assassin's Creed III will feature a host of downloadable add-ons, beginning with a four-chapter Benedict Arnold campaign that will be made available exclusively to PlayStation 3 players.
Additionally, a $30 Assassin's Creed III season pass for all platforms includes a tyrannical George Washington single-player mission, as well as new maps and characters for the game's multiplayer component.Oakland Athletics San Jose Sharks

Guys, I understand. I really didn't mean to upset any of the fans of this series, so I'll use spoiler for the rest, so if you don't feel like, you can just move on.

In the past games, if you shot a gun and were not hidden from view, then they would find you. I haven't seen the video you are talking about though, so they could have changed it. Also it could have been early in the game and it gets harder as you go. They become aware that you are there and are actively looking for the Assassin.Comment

The TV ad campaign for this game has been one of the better ones for a video game that I can remember.
I played the first Assassin's Creed and wasn't a huge fan, but after seeing the commercials for this edition I am very interested.Ryan Spencer

Yes the guns are not done accurately. You can shot people and kill them with 1 shot, but you are also a highly trained assassin. The enemy isn't really trained, so they don't get the head shots to kill you. Yes they should be able to kill you easier, but it is a game and people want to be able to beat it.

I have no idea what youvalss is talking about though because I haven't seen any of those issues at all and I'm about 20% into the game as of now. Not saying he's lying or making them up but when I've gotten shot(which hasn't been often mainly because I keep a low profile anyway)it's taken at least a quarter of my health. But the AI is definitely no slouch as you get deeper into the game though.
But this is one game where watching videos(especially YouTube videos where people there can make literally ANYTHING look bad)doesn't do it any justice.#RespectTheCultureComment

IGN Review up:
Assassin's Creed III is very enjoyable overall, but it’s not consistently brilliant. Not everything about the game gels together convincingly and the missions’ unnecessary prescriptiveness sometimes undermines the sense of freedom that the rest of the game works so hard to create. But it achieves so much that you can’t help but respect it; no other open-world game has ever given us a setting that's as impressive to observe or as full of things to do as this. Connor’s story has its lulls but it still tells a tale much richer and more compelling than most other games manage, set in a fascinating period of history. Assassin’s Creed III isn’t as huge an improvement upon its predecessors’ achievements as many players will be hoping for, but it’s still up there with the best that the series has achieved - even if it isn't quite the best.Comment
