Been working a lot so haven't had a chance to really cook. Made dinner last night. I filleted the fish myself (black Sea bass), roasted brussels sprouts with speck.

Looks great!
Sad but true, I need help with filleting fish. I've made it 20 years in my career as a successful professional chef and have only filleted one fish in my entire career.

I used to do it all the time when I was a kid and would go fishing. I remember a few months ago when I went to do the Red Snapper, I messed up a bit racing through it. I really took my time with this one. Made all the difference. Got a little to deep into the rib section of the one, but it was a much better job this time.

I don't know if this thread is also meant for diet/nutrition and the like, but although I'm no health freak in any way, I'm trying to reduce my portions that I eat. I'm 27 and I think my metabolism is finally starting to slow, which is just unfortunate (you never think it will happen to you, until it does).
Keep in mind I'm not watching my weight, I'm like 165 lbs. Just my health, I suppose.
My daily intake tends to be the same, though. For as long as I can remember dating way back to middle school, I have always made mac & cheese in the morning (with the exception of my five years in college when I would have an omelette at the dining hall), and I would always make a chocolate milk shake at night. In between may have varied, but now it has pretty much come down to this:
- Macaroni
- Three bananas
- Carrot smoothie (also has oranges, bananas, & mango)
- Dinner (more often than not is a combination of meat, rice & veggies... otherwise, pasta)
- Milkshake (on days I don't have my smoothie)
Very weird lifestyle, but whatevs. The only problem is, I've been trying this for a little over two months, and I don't want to call it withdrawal or anything, but I often feel "hungry" or "miserable" that I'm not eating like twice as much as I normally do, haha. Now, all this said, I'm fine with what I am eating, but on nights that I don't have ice cream (definitely an addiction) I'm like an empty tank going to bed. Also eating less for dinner makes me say, like... I need more! I've also been without In-N-Out as often as I used to (went from like twice a week to twice a month, and it makes me sad haha).
How do ya'll cope with this?
Oh, and other little dietary facts: the only beverages in my system outside of what I just mentioned above are water and orange juice. No soda, alcohol, or energy drinks ever. I eat too fast and always want more in the moment, like before my stomach and brain can get on the same page about my hunger/fullness level. Although it's not always about filling my fatbelly to content as much as it is simply eating tasty things and wanting to continue eating tasty things
Trying to reduce carbs but I'm addicted to the bag of popcorn every night before bed. I've tried cutting out the popcorn but then I just feel weird without it, I'll sit on the couch idle and it's awkward, like my hands should be busy shoveling popcorn to my face but I'm just sitting there watching Netflix.
Carb reduction sucks on a budget. Especially when the results end up being crazy high sodium. It's starting to feel like eggs are the perfect food for me and I just should eat like half a dozen a day lol, they're cheap, low carb, low cal, and low sodium, but then the cholesterol subject comes up and then the "well it's good cholesterol" and who the hell knows anymore

Since I've been forced to go no carb, I've been eating pork rinds instead of chips and microwavable pork rinds instead of popcorn. These are the microwave ones, works just like popcorn - http://www.amazon.com/Lowreys-microw...=operasport-20
The no carb thing really, really sucks but on the bright side, I can eat all the meat and cheese I want. As well as full fat dressings and such. No BBQ sauce though unfortunately, but most hot sauces are fine. If I use ketchup, I've been using the Heinz reduced sugar one to pretty good results.
A typical no carb day for me includes:
Breakfast: Usually either 3 eggs and combined with some sort of animal.
Lunch: I get a Costco rotisserie chicken and it lasts me like 3 lunches. Each day I tear some off, pour blue cheese dressing, blue cheese crumbles, and Frank's on it and some carrots. Luckily some carbs like carrots or beans are okay for my dietary restrictions as they don't seem to feed my acid issues.
Dinner: Some sort of animal and some vegetables of some sort. Depends how it's prepared. Sometimes it's fish with parmesan cheese and broccoli. Other times it's chicken with some hummus. Sometimes it's ground beef or chunks of steak with some sort of cheese or or whatever.
My biggest daily snack is sunflower seeds. I eat tons of them throughout the day at work. I also eat mixed nuts, or a spoon or two of peanut butter, or cottage cheese, or something else. Desserts are a gray area but berries work best, other times there's this non-fat, no-sugar soft serve yogurt I get from a shop around here. Sometimes my Mom will make little cheesecakes with cream cheese, egg, splenda/whatever nonsense and almond flour.
The hardest thing is the repetition. I'm not the type to "get bored" with food (I usually stick to what I like) but it really is a pain in the *** with this. It's also extremely difficult to come up with places to go if I'm going to hang out with friends. Horribly discouraging and even worse when I'm trying to drive around trying to think of something to eat and I end up just going back home because I get so frustrated.
It really sucks to not be able to eat carbs like I used to. It's depressing. I don't necessarily "feel better" in terms of "bounce in my step" but I have definitely lost weight and my blood work numbers have improved (triglycerides have taken a sharp nosedive since I started this). The biggest (and the entire point of this) thing is that it's basically killed off my acid reflux/gastro issues or at least limited them strongly. I used to take multiple antacids a day. Now it's a couple a week at best. Can't argue with those results, unfortunately. I suppose it's better to know what my issue it than have it be something more serious though.
I *do* have free days (like today) though. In those cases, I take a Nexium (even though Nexium isn't intended to work this way, it works for this) and a digestive enzyme supplement and I've been pretty good while eating like crazy. For example, today I've eaten three AM crunchwraps, two hash browns, 4 cinnabon bites, Chex Mix, two double doubles from In-N-Out, and a plate of fries. No issues.
You just gotta eat things to fill you up and drink a ton of water. It doesn't really work because you're still starving (well, I am anyway) but eggs, peanut butter, cottage cheese, and the proteins tend to tide me over relatively decently. The mac & cheese and milkshake isn't going to do much to keep you full unfortunately. I know you can't eat peanut butter though which stinks.Last edited by TheMatrix31; 02-15-2016, 03:32 AM.Comment
