        I used just enough butter/margarine to cover the fish in a dredge. Maybe about a 1/2 cup.
        I used the remaining to sautee some onions.

              So my grill was delivered yesterday and it took me about 3 hours to assemble it. I planned on grilling yesterday too, but by the time I put it together I was burnt out. It was worth it though, really happy with it



              Firing it up today to do some steak bacon dogs and my brisket.

                Looks good man. What time should I be over?

                That grill looks nice. I hope you enjoy it. Make sure you cure it first before you cook on it.
                The directions should say how to do it.

                  The steak dogs came out pretty damn good. Its a cube steak wrapped in bacon with garlic,onions,shredded cheese. green peppers, fresh parsley and some other seasonings on the inside. I let them marinate in worcestireshire (sp) sauce for about an hour before tossing them on. These are how they looked before I put my homemade BBQ sauce on them:



                  The brisket I did came out nice too. It turns out it was a corned beef brisket and not a regular brisket, but it still came out damn good. I used a mix of cherry and hickory chips, soaked in some cheap red wine. I smoked it for about 5 hours, kept the temps between 240 and 275 the whole time. Once I got the temp of the meat to 160 I took it off and wrapped it in foil. I know that fundamentally what I made is pastrami, but it wasn't quite that. Its hard to explain, but it tasted different. Some parts of it were kinda fatty and I didnt like that, but the leaner, meatier parts were so flavorful and tender. Nice smoky flavor to it. I probably ate half the thing as I was sliciing it.



                  I picked up a slab of ribs that I'll probably do along with some onion soup burgers this weekend.

                  As far as the grill goes, I'm pretty impressed. I love the fact that it has adjustable grates so you can raise or lower your fire pretty easily. It also held the temps pretty damn steady while I was smoking the brisket. The storage area underneath is good for keeping your coals and chips. For the price, I would definitely recommend it.                     I know some like to buy pre-made, some like to make their own, some like to doctor pre-made and some have no clue.

                    What are you favorite BBQ Sauces?

                    I generally dont make sauce, mainly because Im too busy with the meat and there are 4 that I really like.

                    Sweet Baby Rays is my #1 store bought BBQ Sauce. Its the one I go to at any time. They also now have Marinades and Buffalo sauces for wings.
                    In my opinion it is the best store bought sauce.

                    My #2 sauce is KC Masterpiece. It is the best substitute to SBR and I usually only buy it when I cant find SBR. They too also have Marinades and other sauces now, but I usually just stick with the BBQ.

                    #3 Store bought, it Bulls Eye. Again this is if I cant find SBR or KCM. Still a good sauce, but made by Kraft and is not as flavorful as the others.
                    In case you cant tell, I like the thick stuff.

                    Now, My #1 All Time FAVORITE Sauce cannot be bought in any store, unless you live in Omaha NE. They might sell some in smaller chains, but its not very widespread just yet.
                    Its Grandma Fosters. They only have 2 kinds in 2 sizes. Smooth & Mild and Smooth & Spicy. My wife usually gets me some when she visits her Corp Office which just so happens to be in O. NE
                    You can buy it over the net pretty easily. If you have never tried it, I suggest you order their free trial size. Its only $6 S&H and it is THEE best sauce Ive ever had!

                      Thanks man! Sweet Baby Rays is where its at. If I dont feel like making my own sauce, I can go with that and be good. I also really like "mild" sauce that you get from alot of local places like Harolds, JJs etc, but I've never bought it in large quantities.

                      A good sauce that you can find here in some stores in Chicago area is Captain Curt's .Stuff is sooo good. I had never heard of it until a few years ago, but my gf's family uses it everytime they BBQ and its good stuff.

                      I also like Open Pit, but only as part of some sauce that I'm making. I can't just have that by itself unless I'm just eating fries with it. I've got to doctor with it otherwise. Its a good sauce to mix with, but not so much by itself. I think the only reason I even like it as much as I do now is because I had it all the time when I was a kid.

                      I think I prefer making my sauce the most, but I never measure how much of each ingredient I put in. Its usually a hodgepodge of about 10 seasonsings and therefore it always tastes a lil bit diff each time. I'm gonna check out that sauce that you mentioned, just ordered the trial size of the mild version. You can never have enough good sauce, my cabinet has like 8 diff bottles right now lol

                          When I've made sauce, I make my own honey BBQ sauce. Was my grandfather's recipe. Haven't made it in ages. I use Corky's sauce usually when I can get to it. Not readily available on the east coast.

                                It tastes like no other BBQ sauce I've ever had. Its not your run of the mill BBQ sauce. It has a more tangy sweet flavor.

                                Should order you a bottle and just give it a shot. Its different than I'm sure anything else you have tried.

                                See I've had the 3 you listed, Sweet Rays, Bullseye, and KC Master piece. Jack Millers taste like none of those. Those are like true BBQ sauce and what I think of it as, Jack Millers does not taste like that. Its so good I can eat it out the jar lol
