    key to a great steak is having a great steak. I prefer grass-fed beef that is finished with corn for marbling. Thats the starting point, and its more important than seasoning or cooking technique (within reason, of course)....gotta have a good cut of meat.

    After that, salt and pepper, seared to medium

      Buy choice to prime beef, grass fed preferable.
      Albertsons sells choice at great prices.

      I leave mine on the counter for at least an hour before grilling.

      High heat, add Sea Salt and thats about it.

      I'll post the pick of a Rib roast that I smoked on my Weber. It turned out great.

        I came into this thread looking for steak advice. Good timing.

        When at the store what should I look for to know it's a quality steak? I'm wanting to try out cook something that is restaurant quality. Can you even get steaks that tender at big chain grocery stores? I'm trying to achieve fat that just melts like you would get on a $50 steak.

          IDK what you have down in TX but here in Chgo, you can go to any butcher or specialty meat shop and get steaks like that.

          Big chain stores? Not generally, but sometimes some of the smaller chains or mom & pop shops.

          Steaks that thick are hard to cook especially on the grill. Notice how they are using indirect heat. Thats the best cuz youll burn the outside before you cook the inside.

              Well the first time cooking a steak wasn't too big of a failure. No meat market in my town, but a Kroger just opened so I at least beat out Wal Mart. Got the most expensive ribeye they had. Pan seared it. I don't like a lot of blood so I tried to get a medium. I think I had it perfect, but I didn't trust my gut and threw it back in. Came out medium well, but still edible. I need to perfect a lesser cut because these were about $16 a pound.

                          OK, obviously not grilled, but my wife and I went out to dinner for our 11th anniversary and I got Sushi and Makimoto.

                          I was so freakin good!

                          White Tuna, Yellow Tail, Shrimp, Tilapia & Sea Bass with a Spider Maki Roll.
