    Official OS BBQ/Grilling Thread

    I can't buy anything but ribeyes now. I was a NY Strip guy but no more.

    My poor wallet.

    My apartment just hit me with a notice about my grill not being 10 feet from the building. The building is brick, it's not going up in flames and I have a charcoal grill, using it on grass isn't smart and I'm not grilling in the parking lot. There's some concrete surface there meant to store grills and stuff.

    Think my neighbor complained. Been grilling for 3 years at this place with no problems and they're new. I actually am cool enough with the neighbors (went to school together) so I don't know why they didn't just talk to me or even text me. I have to admit I was out there at 830-9 a couple times recently because the wife works late sometimes, but just come talk to me.

          Little hard to tell from the pic, but they appear "on the half shell". If so thats the best way to cook reds on the grill. If those are caught, make sure you cut the throats out, some of the best grill snackers on the fish.

              Yes, on the half shell and the best fish I have ever eaten. These were a couple I caught a couple of weeks ago in the gulf. Never knew that about the throats......going back in October and will definitely save them this time, thanks.

                Officially have the greatest GF on the planet. She surprised me with an early Bday gift (very early considering my bday is New Years Eve).

                      That thing looks like a beast.

                      We smoked chicken this weekend. Unfortunately I didn't take pictures, but it was damn good. I used apple wood for flavor.

                        Love applewood. Use it as a rub but I normally use pecan wood chips in my grill or old smoker (WSM)

                          I haven't tried pecan yet. I mostly go between hickory and apple. I've been wanting to try mesquite, but not quite sure what to try it with.

                              That's kind of what I was thinking. Only smoked burgers once.

                              Have you guys ever smoked ground beef? I was thinking mesquite smoked beef would make some nice tacos. Or would it probably be better to do a skirt steak instead?

                                Mesquite is so strong by itself. Gotta be used on beef of some kind in my opinion. I do like to mix just a bit in with a fruit wood for chicken and pork though.

                                Never heard of smoking burgers. Gonna have to look that up.

                                Skirt steak is my favorite for grilling super hot and making fajitas with. Never thought about smoking on though.

                                I guess I need to branch out of my baby back and whole chicken smoking that I've been doing.
