    I did some chicken thighs the other day with mesquite. I generally use cherry or apple but was out and didn't feel like going to store. It was very upfront but surely wouldn't call it bad, more like bold.

    I want to try cold smoking some cheese at some point.

      I still gotta grill me a pizza too. Finally bit the bullet and bought another dough hook for my stand mixer and bought the mozz and pepperoni yesterday.

        I bought a kettle pizza insert with the pro-grate and pizza steel for a 22" weber kettle. Makes great wood fired pizzas. One tiime, I got the temp on deck up to 1000 degrees and cooked an pizza in less than 90 seconds. You use a base of charcoal with wood chunks/logs on top. Works great. Expensive but still much cheaper than a real wood fired oven.

            Any particular wood you use for pizza?

            That looks like a great addition for the Weber.

              Any hard wood will work but I usually use cherry or apple.

                Apparently there is an additional piece that tops the flashing making it more of an oven.

                Do you use a pizza stone on the grill? We have one, but I've never used it because to me it defeats the purpose of grilling.

                Also, for those on a tight budget.

                  Been meaning to upload a picture or two from my summer adventures and decided to include some of my restaurant eats from last week.

                  The pic of the grill was me attempting pork burnt ends by using country ribs from a pork butt and then cutting them up. For the most part I liked them, but I realized mesquite was probably too strong, but it was the only wood I had left. Off to the side you'll see me attempting some beef ribs. That was a fail as I realized what I was really looking for was beef plate ribs or beef short ribs.

                  Next up is a mix of lean and fatty brisket from a place here in Dallas called Cattleack BBQ that only serves lunch on Thursday & Fridays from 1030-2. I loved that brisket and it satisfied a major craving and was worth the 30 minute wait. Not pictured was a delicious and spicy smoked boudin sausage (shout out to Phobia).

                  I followed it up on the weekend by heading to a place called Jambo for their Jambo Texan sandwich. Included on it was sliced brisket, chopped brisket, bologna, pulled pork, sausage link, and two spare ribs. I bought it for the novelty and the sheer amount of meat at only $15.

                    Those mesquite pork ends would be a good finger food at a cook-out. Whip some type of cool dipping sauce (or just use a side of a Ranch) and dip em. Sounds good just thinking about it.

                      If I am grilling pizza, then no, I don't use a pizza stone because I like the smokey, crunchy crust I get off the grill. When I use the kettle pizza, I use the stone and the steel topper. This makes more of a pizzeria style pizza because of the high temperatures.

                        Speaking of Weber attachments, I have a buddy who uses this and swears by it. He has the entire setup with blower.
                        Auber Instruments, Inc. Temperature Controller for Weber Smokey Mountain/ Akorn [SYL-1615SYS-W] - This PID controller is for controlling the temperature of charcoal smokers. It fits venting damper heights of about 40mm or 1.57" like the Weber Smokey Mountain, newer Chargriller Akorn or other similar charcoal smokers. It will regulate the on/off time interval of the blower to stabilize the temperature in the charcoal smoker. Three different sized blowers are offered: 6.5, 10 and 20 CFM. A lower flow rate blower produces better control results at low temperature cooking (

                          I may have to get one of those. That would give me the peace of mind I needed for overnight cooks to actually get some sleep.

                            Yea they smoked a boston butt like 12 hours couple weeks ago, one of the things he mentioned is how nice it was to know the temps were rocking the same all night. Plus it supposedly makes the coals last longer. I've never used one but from just what he has said, its worth the price if you want to smoke with less effort.

                              I use a pizza stone, just because I get more uniform results. Works well for me
