First time doing ribs. I have a gas grill so tried to smoke them on there. Had some mesquite wood chips in a foil pan. Had 3 of the 5 burners going. This was outside my comfort zone as I’ve only done steaks, chicken, burgers and hotdogs.It’s easier to do the right thing, than to explain why you didn’t.Comment

Pulled out my Smoker last week, did a couple Boston Butts and smoked some chicken wings. Wish I had taken some pictures but wasn't thinking, on most of the chicken wings I did a Lime Buffalo sauce. If you like Buffalo you need to try them, cooked the sauce and added brown sugar, lime juice and lime zest. After I sauced the wings I put them in the oven for a few, when they were done I added a little more lime juice and zest. The Chef Show on Netflix has two episodes with Aaron Franklin of Franklin BBQ in Austin, TX. It was a fun watch. Gives a quick brisket trim lesson too.Comment

Awwww yeaaaah. These were for Father’s Day meal. Can’t take credit, my Dad smoked these bad boys (no grills/smokers allowed at my complex 🤬. I think I had nearly a whole rack because they were stuuuuupid good.

No pics, but got a great tri tip from Costco on Saturday. Well, we got one prepared by them and another by another company that we're freezing. Got a Weber 22" Premium today. $115 brand new on clearance at Target. Already have an Oklahoma Joe Offset, but the firebox sucked for actual grilling, and for a small smoke it's not worth the effort.
Going to get some firebricks so I can do a DIY slow-n-sear.Comment

Had a party for the wife's bday over the weekend. Made a brisket on Friday and did pork belly burnt ends on Saturday. Brisket was $1.98 "choice" from WinCo. The packer managed to slice the point an inch down the middle, but it still turned out pretty good. Tried a rub with coffee and it turned out great. Re-heated for the party via sous vide.
Pork belly I cooked on the new weber and they turned out pretty good. Use HowtoBBQRight's recipe. Done it before, but this time it needed an extra 30 min in the oven cranked up to 350 to become tender. Might just have been it not getting as much heat as I thought on the weber. Still turned out pretty good.Comment
